Calm Chowder
A seafood and dairy-free take on classic New England Clam Chowder. My Boston born wife loves it.
Ingredients:
- Extra-firm tofu
- Raw cashews
- Plant-based milk
- White miso
- Fresh oyster mushrooms
- Chopped onion
- Chopped celery
- Chopped carrots
- Minced garlic
- Low-sodium vegetable broth
- Peeled and chopped russet potatoes
- Old Bay Seasoning
- Dried thyme
- White wine vinegar
